Chef Brett Redman and his restaurant partner Margaret Crow have a knack for creating neighbourhood restaurants with the buzz – whether it’s Elliot’s in Borough Market or The Richmond in Hackney. Their latest venture ‘just happens to be’ a part of The Principal London, but it’s the antithesis of a hotel-restaurant. Instead, it is quirky and full of theatre — from signature dishes prepared on a trolley by the table to sharing platters that foster a genuine sense of community and an oyster bar for a dash of affordable luxury.
